Very English Tea & Biscuit Cupcakes

With the Queen’s Jubilee and the Olympics coming up, people across England seem to be getting stuck in to a little bit of English pride. So I decided to jump on the bandwagon and make a very English treat – Tea and Biscuit Cupcakes.

A classic cupcake infused with Earl Grey tea and finished with Rich Tea biscuits – spiffing! (Quick tip: Don’t add the biccies until you are ready to serve the cakes, as they will go soft otherwise).

I’m thinking a version with my beloved Teapigs English Breakfast Tea is next on the cards, for an even stronger tea flavour. If you like your tea, try it – it’s the best tea ever!
