I made this cake back in November and can’t believe I forgot to add it to the blog! It’s one of my favourite cakes that I’ve made.
The cake is made up of a simple chocolate sandwich cake (try this, adapted from Mary Berry’s Victoria Sponge recipe) sandwiched together with a rich chocolate ganache. The cake is then covered with more ganache and topped with a mix of your favourite Rocky Road ingredients; I used mini marshmallows, white chocolate malteasers, dark chocolate chunks and fudge chunks. Give it a final drizzle of ganache and voila! The perfect celebration cake!
Unfortunately I can’t remember how much ganache I made but I think it would have been along these lines:
200g good quality dark chocolate, at least 70% cocoa, roughly chopped
284ml carton double cream
2 tbsp caster sugar
– Put the chocolate in a heatproof bowl and set aside.
– Put the cream and sugar into a saucepan and heat over a low heat until it starts to bubble/is about to boil. Remove from the heat and pour over the chocolate. Beat until the chocolate has melted and the mixture is smooth.
